What is the difference between Raw Honey and Processed or Ultra-filtered Honey?
Raw Honey is straight from the honeycomb and only filtered to remove small debris or parts of beeswax. This is a simple filtration process that allows the honey to keep antioxidants, pollen and valuable nutrients that only Raw Honey offer. Raw Honey is not pasteurized and may appear more opaque, however it is safe to eat.
Processed or Ultra-filtered Honey is pasteurized and filtered meticulously to remove all pollen and debris. While this process makes the Honey clear and smooth it also removes the nutrients and antioxidants. Much of the Honey on the grocery shelf is pasteurized and filtered to extend shelf-life and cannot be traced to its country of origin.
To insure you are consuming Real Honey it is best to purchase from a local beekeeper.
